Busy, busy weekend! It seems that my newest thing is buying meat! Since we have a new BBQ with smoker so we have been having fun with smoking some amazing foods!!! Each time I go out, I come home with more meat to smoke! We decided that we wanted to do smoked ribs for Easter - regular rub & BBQ sauce for theirs and sugar free rub & BBQ sauce for me. They turned out amazing!!! I need to divide up the meats and decide what we are making this week and what needs to go in the freezer. And what perfect timing - we have some more great weather this week!!!
I have been spending a lot of time focusing on my two challenges that started last week. I was able to accumulate 25 points for the first week of the 60 Days Stronger Challenge! AND I am over half way of the 40 Mile challenge!!! Which was great because I had a really slow start to my day today (must have been the rain) and I didn't do any walking today!
