The other night for dinner I unexpectedly did my second recipe makeover!!! We had a plank of Salmon that I purchased from Aldi that needed to be used so I figured why not! This recipe isn't nearly as big of a difference carb count before and after but still a reduce in carbs none the less! I am on the lookout for a lower carb Hoison sauce but I am not even sure if they make it in a low carb version. :)
Here are the ingredients that I used including a separate photo of the maple syrup that I used for the carb lovers in the house.

As you can see this recipe only had 11.2 carbs to begin with. In the grand scheme of things this would totally fit in my diet. This combined with a cup of steamed broccoli (4 carbs) it would be a great meal! But knowing I could do better is the challenge that I LOVE!
This picture shows the difference between the two sauces. The one on the left is the full carb count sauce with the "real" Maple Syrup and the right is the low carb version. As you can see, since the sugar free syrup isn't as thick as the real stuff, the mustard just didn't blend in as well as it did with the real syrup.
What I changed:
* The only thing that I change for the ingredients was the Sugar Free Maple "flavored" syrup
* I did also change around how I cooked the salmon...instead of cooking the salmon in the broiler for the first 5 minutes, I put the fillets in the Instant Pot on steam for 5 minutes. I then put the fillets in my dish, brushed on the sauces while I waited for the broiler to heat up. The time on the recipe says 7-10 minutes for the second part of the cooking BUT I ended up cooking mine for 10 minutes. Once it was out of the oven, I brushed on more of the sauce.
It smelled delicious!!! Even the girl cat (we fondly call her "Cat-Dog" because she begs for food just as badly as the dogs) even came running out for her portion...I cooked some un-sauced salmon for her but she just didn't seem as happy about it. EVERYONE loved this dish! I will definitely be making it again. And let me add right here...I AM NOT a fish lover. My idea of good fish is the beer battered deep fried kind. But that just doesn't fit in my lifestyle anymore.

This little change (which was so tasty that I ate ever bite of it) ended up being ONLY 5.4 carbs!!!
Ok so here are the final makeover results...
11.2 carbs from the original recipe - 5.4 carbs from the updated version = a carb reduction of 5.8 carbs!!!
Again, not a lot of change but if I was having a not so great carb day, this would allow me to have a nice dessert!!!
