YIKES! Almost a week!!!

  WOW! I can't believe that it has been almost a week since my last post. SO much to update on!!! Let's start with today and work our way backwards shall we? 

Today was my last day of the 21 Day Fix Program with Beachbody on Demand! I am so excited to have finished it - I feel so accomplished! AND the best part of it...I lost a total of 4.25"!!! I am so much more excited about this than the number on the scale! I feel so good. Words cannot describe how proud I feel for myself right now. You maybe looking at me saying, what's the big deal but for me it is. My body notices the changes - craves to be moving and exercising. It is just so weird!

Tomorrow, I am starting a new program called Barre Blend. It is an 8 week program! Actually, the next 2 days are kind of warm up videos (shorter versions) and I will start the actual program on Monday. 

Since it has been snowy the last week here in Michigan, I have been shoveling snow for an extra workout. It was all good when we were getting a few inches but this last snowstorm was pretty big and I needed help from my kiddo to get the job done! Here are some shoveled driveway pictures...

Yesterday, I had to run some errands even though it was pretty snowy out there. Some of the roads weren't the greatest but thankfully I have an AWD vehicle. I took advantage of the fact that most people stayed home and went to Trader Joe's. Each time I have driven by the line to get in has been long and I just didn't have the time to wait. Not the case yesterday! I walked right in and had a great time finding all of the great Keto/Low carb things that I have been seeing on social media! I was like a kid in a candy shop! Here is my haul (note: not everything was low carb: I did buy some stuff for my family too). 

I did make my peeps the Orange Chicken (with rice) for their dinner. That is always a family fav - and I did sneak a couple of pieces but I used the Cauliflower Gnocchi to make this YUMMY soup...

Here are some more yummy foods that I have made in the last week...

Breakfast this morning...scrambled egg whites, chaffle with bacon bits and green onion, half an apple with half a Light Greek Vanilla yogurt cup for dipping Portabella Mushroom sandwich with provolone cheese, red onion and lettuce on a Sola bun with a homemade spicy mayo.Valentine's tradition- waffles with strawberries & whipped cream and bacon. I made strawberry syrup for my peeps and used sugar free syrup for myself.

This Salad came from Arby's. I had some extra carbs for the day so I went with the crispy Chicken and added some chopped up hardboiled eggs! YUMMY! 

And the last exciting tidbit from this past week is that I am scheduled to get my first Covid vaccine on Sunday! The school district that I work with is partnering with a local hospital to get all employees vaccinated (if they want to) and since I am in the high risk category, I signed up! 

I still have to edit some photos for my recipe makeover and because of my Trader Joe's Haul...I have even more things to give a review on!!! Stay tuned!!!
