I always want to say Taco Tuesday but truth be told, we rarely have our taco night on Tuesday! Today is National Pizza Day! Funny thing is that Ken and I talked about making pizza tomorrow...wonder if he would want to change it up and make it tonight! This week for pizza night, I am planning on making my pizza base by using a chaffle. I think that garlic bread one would be perfect!!!
As always, things have been busy here. I have really been trying to focus on house stuff and getting on a routine with a cleaning schedule. I have been finding that it is getting harder to lounge around. My body wants to keep on going but at the same time, it feels (like what I would imagine since I do not have) is ADHD...I feel like I am all over the place. I do a partial task and jump to the next task and then hop back over to the original one. It drives me crazy some days because I sometimes forget what I was working on or what still needs to be finished up. Don't get me wrong, I am LOVING all of this extra energy. I just need to focus more on the task at hand.
I mentioned on my Facebook page the other day that Sunday's are my usual weigh-in days. Last week, I didn't accept the weight the scale gave me but when I got on the scale this week, I was pleasantly surprised! Down 5.6 pounds!!! It just goes to show you how your weight can go all over the place even when you are eating better and exercising! The hard work is definitely starting to pay off! I feel it different parts of my body. Now my family really can't tell a difference because I see them ALL of the time but I know there are changes.
Sunday we did a lot of family cooking time. I decided to go with French toast & sausage for breakfast/brunch since I had some bread to use up. I did use the low carb bread for myself. It was good- I just feel that the bread I used was a little on the dry side (nothing that a little extra sugar free syrup couldn't fix). I also had some mushrooms that needed to be used and I made a low-carb Cream of Mushroom soup. YUMMY! Ben has been really getting into making "gourmet" hamburgers so he made them for us for dinner. While Ken worked on his homemade bread. I have really been trying to incorporate that into their meals so that the bread doesn't go to waste. Since I am not eating it really (I did have some last night), it tends to stick around longer or goes in the trash. Yesterday I made an awesome looking Grilled Havarti Cheese sandwich and today a toasted Tuna Fish Sandwich for Ken. It only makes me slightly jealous that they get to have it on a regular basis. :) I love my breads and pasta - so I really could spiral if I let loose!
My energy is kicking in again....so I will end my post here. I will share a few photos though.
