WOW! Jackie made our second dinner from the Hello Fresh box that we received this week. It was a Cherry Balsamic Chicken with Almond Couscous & Roasted Carrots. I was so excited to dig into this dinner that I forgot to take a picture again!!! To keep m carb count down, I took only a little scoop of the couscous and a few of the carrots. But the chicken and the sauce was amazing!!!
During this pandemic, Jackie has been practicing her hot chocolate making skills! She makes some killer hot cocoa but unfortunately now I can't have her version. Ken found some awesome specialty cocoas (I am going based on what they told me) and this cool little cocoa wooden whisk. It looks something like this. So off to search for a good low carb hot chocolate for me!!! I found this recipe...but I added a little cinnamon and a 1/2 teaspoon of espresso powder (I tried to copy one of Jackie's recipes). IT WAS AMAZING!!! I thought it tasted just like what I was used to BUT she tasted it and didn't like it. She doe not like Almond Milk and said that the taste really overpowered the cocoa. All I could taste was the hint of cinnamon in the chocolatey goodness! YUMMY! I will be making it again tomorrow. It is totally worth the 4 carbs!!!

Ken had a Sweet Almond cocoa and Jackie had Super Dark cocoa. Both really liked it!
