Today we received our second shipment from Hello Fresh! Jackie & I had picked out some yummy selections and we were pretty excited to get it this week! We picked the Onion Crunch Chicken, Creamy Chive Chicken & San Antonio Beef Bowls!!! Unfortunately, they did not pack the box correctly and even though we received the recipe card for the Creamy Chive Chicken they sent us the Bruschetta Zucchini Boats. My guys do not like zucchini so I have decided to just use the components other ways...using the zucchini to make zoodles on pasta night for me. And of course the tomatoes will go to good use!!!

Jackie said the first one we are making this week is the Onion Crunch Chicken! I am really so proud of her and how she is learning to cook all of these wonderful foods. She follows the directions perfectly and the food always looks just like the photos!
Speaking of Jackie cooking...here is our 3rd dinner from week 1 of Hello Fresh - Italian Wedding Soup! Holy Cow!!! It was great! The first time she made meatballs and they turned out wonderfully! Again, super impressed mom here!

Today at lunch, I made a decision to pitch the Nostalgia mini waffle iron! It was absolute crap! Only cooked on one side and when it did cook, it burned the bottom! I wish I did some research before wasting the money - thankfully it was only $8. After reading around on my low carb groups, I went with the Dash mini waffle iron. I am pretty excited to use it tomorrow!!! I ended up using our regular waffle iron which caused a hiccup in my lunch plans...since the waffles are bigger, there was only enough batter to make one (which is actually makes 2 on the Dash). I ended up cutting my turkey burger and waffle in half to make a Bacon Turkey Burger...which ended up being so tall and when I pushed it down the mayo squirted out. But in the end - it was great! The Wonderbread Chaffle was so fluffy! I am looking forward to making this again without hiccups. And of course, here is the picture of lunch...
Last week, I had mentioned that I want to "makeover" a recipe by using low carb ingredients to get the carb count down! Tomorrow will be my first Recipe Makeover! I am pretty excited about this one - I REALLY cut down the carbs!!! HINT: It is a breakfast food and I am using my new Dash!!! Check back tomorrow to see what it is!!!
