I know it may seem crazy but I was really looking forward to today! My weekend was pretty much a dud and I just wanted to get back to our daily routine. Both days were rough for me but for two entirely different reasons.
Saturday I woke up and my BP was a little elevated but as soon as the medicine kicked in, all was well. I had a crazy pain in my eyes but without a headache and I should have figured it was a sinus thing! It wasn't until I started getting pressure in m nose area so I took my Claritin and all was well - unfortunately most of the day was gone. I did get some quality snuggle time in with my pooch laying on the couch watching Hallmark movies.
Sunday I felt 100% better and I had so much to catch up on that I had planned to do on Saturday. Everyone in the house was doing their own thing and on their own schedules...even their eating schedules so we didn't have any meals with all of us together. That just made my whole day off and weird! I found it harder to decide what I wanted to eat myself.
So today, I was up and going and even working on stuff before my first cup of coffee was done. I have started some deep cleaning projects, purging stuff we are not using anymore & organizing! Needless to say, today was a blur. It was a good start but still have lots to do!!! Tomorrow I plan on doing some new stitch outs for new products!!! YAY!
Here are some yummies from today...
Lunch time! Green Smoothie (baby spinach, almond milk, raspberries and strawberries) with a Grilled Munster cheese sandwich on Sola bread.
Dinner was steak, carrots and mashed cauliflower!!! Yummy! I ended up only eating half of the steak that I purchased and this part I ended up over cooking. Ugh! But the Mashed Cauliflower was amazing! You can find the recipe here.
Dessert...Sugar Free Lemon Pudding mixed with 1 cup heavy cream and 1 cup half & half. Topped with whipped cream and then blueberry syrup that I made with fresh blueberries, monkfruit sweetener and a little bit of water. IT WAS DELICIOUS!!! The blueberries were still warm and was melting the whipped cream.
